Langues de Chats

If it involves cats, I'm there.

It does make a good substitute for a cat tongue, doesn't it? ;)

Langues de Chats is French for "Cat's Tongues".  And they're very similar to tuiles, similar in recipe, in flavour and in addictiveness.



This recipe came from the Laduree Sucre book.  They were sort of enticing to begin with and after making a batch of Pots de Crème, I had a bunch of egg whites left over so I decided to give it a whirl.

My intention is sort of to give all the recipes in the Sucre book a go.




Langues de Chats
Adapted from Laduree Sucre

9 tbsp / 125 g butter
1 1/3 cup / 160 g castor sugar
1 tsp vanilla extract
2 tsp sugar
2 egg whites - 60 g
1 1/4 cup / 160 g cake flour

1. Make vanilla sugar by combining vanilla and sugar and stir to dissolve.


2. Warm the butter until very soft, and beat in the mixer.

3. Slowly add the castor sugar.


4. Carefully sift in the cake flour.  You may also wish to do this step by hand.

5. Spoon batter into a piping bag fitted with a 5 mm-8 mm tip

6. Pipe strips of about 6 cm on baking sheet lined with parchment.  Leave some space for spreading

Okay, so not THAT far apart...
7. Bake for about 12 minutes in 350F oven


8. Allow to cool on baking sheet or peel off immediately to shape the cookie (curl, etc.)

9. If you wish to dip your cookies, prepare a small amount of chocolate by adding a tiny bit of heavy cream into the chocolate and heat in the microwave for 15 seconds at a time until melted.

10. Dip and rest cookies on parchment to set.

11. Place in airtight container to store.


Meow forgot that using alcohol based extracts to flavour will hinder the setting of the chocolate
Proper way is to infuse the cream with the flavouring first instead of just putting drops in
The dark chocolate one set nicely, coloured ones did not set

Yep, size checks out.  It is indeed a Langue de Chat

Be careful about these as they are very addictive.  Small, light, buttery.  Meow ate the first batch that came out as she was baking the second, and the whole batch didn't last for 2 days.  Mr. Meow helped.
